Okay, more details on the squash soup, because I made it over the weekend myself. I cooked one package of butternut squash and a couple small potatoes, cut up, a handful of carrots, cut up, and a handful of celery, cut up, and some onion pieces. When everything was done, I scooped some of the vegetables out of the mix and set them aside. Then I put the rest in the blender and blended it smooth. I returned it to the pot and added the reserved veggies. Yum!!

Shrimp cooked in just a little butter - can't get enough of them!

Do you like salmon. I put a salmon fillet in a baking dish in which I had melted just about a tsp of butter and flipped it over, so the butter was on both sides. Then I cut up about 1/3 of an onion and put the slices on top, then sprinkled on some black peppter. (Seasoned salt works well, but I don't have any.) I baked it at 400 for about 25 minutes. Soooo good.

What things do you enjoy eating? Do you like to spend time cooking or is that last thing you want to do when you get home?

I totally understand what you are saying. Nothing you said upset me. I don't think you don't understand nutrition. Its just that even I need to be reminded of things once in a while because I get in bad habits.

Oatmeal ideas. Someone said there are orange craisins out now that go really good in oatmeal. I haven't tried them myself, but I may. I'm sure you have tried peanut butter. That is my favorite add-in. I wonder how nutmeg or ginger would go in oatmeal...Have you tried cutting up small pieces of apple? I'll bet you could stir in applesauce (unsweetened).

Do you like shrimp? (Not in your oatmeal...) I'm amazed how something so good could have so few calories. That's what I'm having for supper tonight. And squash.

Speaking of squash - squash soup is good. Just make the squash more liquid by adding more water or broth, then add some pieces of carrot, potato, celery, onion, etc. and cook it good. It's very hearty and good. I'm not sure about what spices you add, but you can experiment.

Keep up the good work.

Love,
